Sig's Zucchini and refried Bean fritters with Yogurt Dip

Cooking instructions

* Step 1

Combine zucchini,onion,flour,eggs,herbs,beans, salt and pepper to taste in bowl.

* Step 2

Shallow-fry by making flat little cakes (similar to potato cakes) in hot oil until lightly browned underneath.Turn fritter cook until well browned on other side. Take out of pan and drain.

* Step 3

Yogurt Dip, mix all ingredients in a mixing bowl until well combined.

* Step 4

Serve tzatziki with fritters.

* Step 5

Makes 16 small fritters
