Vickys Savoury Cauliflower 'Rice', GF DF EF SF NF

This is a great alternative to rice and cous cous with much less calories. Great for getting more vegetables into your diet

Ingredient

Food ration :

4 servings

Cooking time :

40 mins
2 cloves

garlic

80 grams

sweetcorn

1/2 tsp

ground cumin

1/2 tsp

turmeric

Cooking instructions

* Step 1

Roughly chop the onion, carrot, courgette and red pepper into chunks and put into a food processor with the cauliflower florets, garlic and ginger, pulsing until finely chopped (but not pureed)

* Step 2

Put the mixture into a saucepan with the cumin and turmeric and stir to coat

* Step 3

Add the stock and sweetcorn and bring to a simmer. Let cook until the stock has all been sucked up by the cauliflower, around 15 minutes

* Step 4

Season well with pepper and some salt and serve immediately
