I love things you can just shove in the oven and forget about. I think fennel is a bit of an aquired taste so if you don't like aniseed-y tasting things, just swap it out for a sliced onion

Cooking instructions
* Step 1
Preheat the oven to gas 6 / 200C / 400°F
* Step 2
Put the olive oil, white wine, crushed garlic and herbs into a roasting tray and mix together
* Step 3
Add the chicken and vegetables and toss together in the wine mixture. Season well with salt & fresh pepper
* Step 4
Roast for 35 - 40 minutes until the chicken juices run clear
* Step 5
Easy! Great served straight from the roasting tray at the table
