thick sliced onion

garlic bulb peeled and slightly smashed

large bunch broccoli leaves washed

large handful carrot top leave destemed and wash3d

merlot

1 cup

water

1/4 cup

vegetable oil

beef roast prefered cut I love chuck or cross rib! Its like eating a thick stake

Cooking instructions

* Step 1

Pre heat oven to 475

* Step 2

Mix all seasonings together and rub roast all over

* Step 3

Heat oil in pan, and sear roast on all sides.

* Step 4

In glass roasting dish layer carrot and broccoli leaves then carrots onions garlic potatoes. Place roast on top.

* Step 5

Cook at 475 for 15 min. Then 275 for 1hr 15 min. Or as recommended for your size roast and preferred tenderness. I cook for medium rare a bit more on rare side.
