Veggie (or Quinoa) Rice

This was awesome! I substituted with quinoa this time and it was just awesome. I had some quinoa already cooked so I sautéd the veggies per the instructions, left out the water, stirred in the quinoa and seasoning and finished with the parmesan. So good and so much healthier! :chef

Cooking instructions

* Step 1

Saute veggies in olive oil till soft. (I used the insides of the zucchini for stuffed zucchini boats.)

* Step 2

Add in garlic, rice or Quinoa and oregano, saute 1 minute more.

* Step 3

Add in water and bring to a boil. Turn off heat and cover and let sit till most all water is absorbed. If substituting with quinoa reduce to a low simmer and stir occasionally until liquid is completely absorbed.

* Step 4

Stir in Parmesan cheese and extra seasoning if desired serve.

* Step 5

Enjoy as a main dish or side with fish, Pork chops, steak or chicken!
