#Breakfast#Lunch This was so good, I woke this morning really hungry, looked in the fridge and came up with this. I must say the Avocado and Sweetcorn actually added a sweet taste together with the rest. I loved it.

Ingredient

Cooking time :

5 minutes

Cooking instructions

* Step 1

Whisk the eggs and add the milk and whisk.

Cut or slice all the veg your putting in ready.

* Step 3

Heat up a non stick pan or greased skillet. Then when hot

* Step 4

Add the egg to the pan turn heat down to medium and add the salt and pepper

* Step 5

When the egg starts to look solid on the bottom add all the filling to half the egg. Add the cheese last

* Step 6

Cook still on medium for 2 minutes then carefully with a spatula lift the edges of the half of the egg with no filling if it lifts easily flip it over the other half on top of the filling

* Step 7

Next press down around the ends to seal leave for 1 minute then lift the egg again carefully and flip the whole egg over. Turn heat off.

Slide the omelette off the plate slowly so it's in one piece garnish with parsley or I garnished mine with some Rocket lettuce

Serve warm and Enjoy.
