Caramel Corn
Cooking instructions
* Step 1
Pop approximately 6 qts of popcorn. Air popper works very well for this. Remove excess kernels and hulls. Divide into 2 containers where the Carmel can be stirred in the corn.
* Step 2
Melt the butter in a large saucepan. Add the sugars and corn syrup, stirring as it begins to heat up on medium heat. Bring to a slow boil. Stir while boiling for 5 minutes. Reduce heat a bit and be careful not to burn it.
* Step 3
After 5 minutes, add 1 tsp of baking powder and stir it in, removing from the heat (will get light colored and foamy). Once combined thoroughly, pour over 6 qts of popcorn in a large pan/bowl.
* Step 4
When evenly coated, put the popcorn on parchment paper lined cookie sheets.
* Step 5
Bake in oven at 250 degrees for 1 hour. After removing from oven, dump into large Tupperware and let cool before sealing it up.
