Durian macaron

Durian, the king of fruit, is a famous exotic fruit in Thailand. This time is durian season and many bakers use durian as a key ingredient in their desserts.

Cooking instructions

* Step 1

Dry almond powder at 120c for 20 min. Let it cool to room temperature

* Step 2

Mix dried almond powder and powdered sugar. Sieve and set aside

* Step 3

Add cream of tartar in egg white. Beat until it starts foaming then gradually add caster sugar in 3 portions. Beat until stiff peak is formed

* Step 4

Add almond mixture into egg meringue. Gently fold the mixture just to combine. Separate some batter for white, yellow and green coloring

* Step 5

Mixed each colored batters until lava like teature vut not too runny

* Step 6

Pipe green batter and decorate with white and yellow batter on top. Let the surface dry a bit and decorate durian spike with green batter. Let the whole macaron shell dry and form skin.

* Step 7

Bake at 140C for 15-20 min

* Step 8

For durian filling, melt white chocolate with heavy cream in microwave. Then add durian puree. Mix well. Keep in fridge until set.
