Naima’s take on South Sudanese 🇸🇸Lentil Soup

Naima took us through a delicious wonder of the Arab cuisine called lentil soup. A delicacy in her family and now ours too 😉

Cooking instructions

* Step 1

In a bowl, wash lentils and drain off all excess water. Set aside

* Step 2

Heat oil in a shallow pan and sauté the onions until fragrant and tender. Now add the lentils, stir fry for 2 - 3 minutes

* Step 3

To the stir fried lentils, add hot water just enough to cover the top of the lentils. Let cook until almost tender

* Step 4

Add all chopped vegetables and seasoning to the lentil pot, add more water to cover all ingredients. Cook on medium heat, frequently stirring to facilitate mashing of the lentils [be careful to leave a few chunks of vegetables]. This will take around 10 to 15 minutes depending on the type of lentils

* Step 5

Serve with naan bread or as preferred. Enjoy 😉
