Cinnamon Swirl Banana Muffins

Cinnamon Swirl Banana Muffins

Ingredient

1 1/2 cup

cake flour

1/4 tsp

salt

1/3 cup

mayonnaise

1 tsp

cinnamon

2 Tbsp

milk

Cooking instructions

* Step 1

Preheat oven to 180C and line a muffin pan with paper liners

* Step 2

Mix cinnamon and one tablespoon of sugar and set aside for later

* Step 3

Mash bananas in a large bowl. Whisk in the mayonnaise, sugar, butter, egg, vanilla and milk

* Step 4

In a separate bowl, whisk together flour, soda, salt and baking powder

* Step 5

Add dry ingredients to wet ingredients and stir until combined. Fill muffin liners with batter and top with cinnamon-sugar mixture followed by a banana slice. Push the banana in a little so it sticks

Bake for 17 - 20 minutes or until a toothpick poked into the center comes out clean or with a few dry crumbs

Serve cooled or warm. Enjoy!
