Lemon Pepper Salmon over Fried Potatoes

Lemon Pepper Salmon over Fried Potatoes

This is a great pairing that I never would have put together. I needed to use a few last potatoes and was going to save it for morning with eggs. Then I didn't have a side to go with fish and got creative. It was a big hit that will stay in my rotation.

Ingredient

Food ration :

2 servings

Cooking instructions

* Step 1

Dice the potatoes and pepper.

* Step 2

Coat a frying pan with oil and heat

* Step 3

Add potatoes and peppers. Saute until slightly browned over medium heat.

* Step 4

Meanwhile start pan frying the salmon, coating with lemon pepper seasoning. Cook halfway, flip and season the other side. Finish frying.

* Step 5

Add broth. Cover and let steam about 5 minutes until the broth absorbs.

* Step 6

Uncover and saute until browned.

* Step 7

Plate the fried potatoes in the center and top with fish slightly offset.

* Step 8
