Cooking instructions

* Step 1

Add all vegetables to a bowl. Add vinegar and evoo and pepper. Mix by hand. Squeeze over lemon juice.

* Step 2

Split between two serving bowls, then put cheese on top and sprinkle over oregano. Garnish with mint. Final splash of evoo.
