Sweet Potato Souffle

Cooking instructions

* Step 1

Heart oven to 400. Place the sweet potatoes on a foil lined baking sheet. Pierce with a fork. Bake for 1 hour. Allow to cool. If desired bake night before and refrigerate.

* Step 2

Peel the potatoes and place the flesh in a large mixing bowl. Mash until very smooth. Mix in butter, eggs, sugar, vanilla, cream and salt until thoroughly combined. Transfer mixture to a greased 4 quart casserole dish. Smooth to an even layer.

* Step 3

Mix all Topping ingredients in a bowl. Sprinkle evenly on top of the mixture.

* Step 4

Bake in a 350 heated oven for 40 minutes until slightly browned. Let cool for 5 minutes before serving.
