Cooking instructions

* Step 1

Heat oven to 350°F

* Step 2

Add eggs salt pepper and cheese to a large mixing bowl and mix well set aside

* Step 3

In a large pot cook the potatoes in salted water. Add potatoes to boiling water cooking 5 to 7 minutes

* Step 4

While potatoes are cooking, in a skillet over medium heat cook the onions with 1 tablespoon of vegetable oil until brown and tender about 2 minutes stirring often

* Step 5

Add sausage to the onions, cooking 5 minutes stirring often

* Step 6

Drain potatoes and add to the skillet

* Step 7

Add the egg mixture to the skillet, mixing well with other ingredients

* Step 8

Cook over medium heat 2 minutes, occasionally lifting edge with a spatula and tilting skillet to allow uncooked egg to flow underneath. Do not stir

* Step 9

Reduce heat to medium low and cook another 3 minutes until eggs are firm on the bottom

* Step 10

Remove skillet from stove top and place in from the oven until eggs are firm about 10 minutes

* Step 11

Remove from oven and cut into wedges. Top with tomatoes and green onions and serve. Also top with crumbled cooked bacon

* Step 12

May also top with 3/4 cup shredded cheese immediately prior to placing into oven
