Barley salad with feta and pine nuts
Cooking instructions
* Step 1
Place barley in a saucepan with 1.5L (6 cups) boiling water. Simmer for 25 minutes or until just tender.
* Step 2
Rinse under cold water, then drain.
* Step 3
To make dressing, place all ingredients in a screw-top jar and shake well.
* Step 4
Place pine nuts, olives, tomatoes and rocket in a large bowl with barley.
* Step 5
Add dressing, toss to combine. Serve in bowls, top with feta and season with salt and freshly ground black pepper.
