Cooking instructions

* Step 1

In a saucepan, place rice mix, contents of seasoning packet and water as directed on the package.

* Step 2

Bring to a boil.

* Step 3

Add carrots.

* Step 4

Reduce heat.

* Step 5

Cover and simmer for 30 minutes or until rice is tender and water is absorbed.

* Step 6

Meanwhile, in a skillet, sauté squash, peppers and onion in oil until crisp tender.

* Step 7

Stir into rice mixture.

* Step 8
