Rockin' Rice Salad
Cooking instructions
* Step 1
Cook the rice according to the package directions.
* Step 2
In a medium serving bowl, combine the Italian vinegar and oil with the water and let stand for 5 minutes.
* Step 3
Add the oil, vinegar, soy sauce and sugar (if using) and mix well.
* Step 4
When the rice is done, let cool for 5 to 10 minutes and then add to the bowl with the dressing.
* Step 6
Cover and refrigerate until ready to serve.
* Step 7
Just before serving, stir in the spinach, celery, onions, olives and bacon.
