Cooking instructions

* Step 1

Place pumpkin on tray and lightly spray with oil and bake until golden and tender.

* Step 2

Whisk eggs, ricotta & onion.

* Step 3

Divide pumpkin and spinach between muffin holes. Fill with egg mixture. Bake 20mins until golden
