Coconut Poached Chicken & Mango Salad

Cooking instructions

* Step 1

Bring stock ginger and coconut milk to a simmer in frying pan. Add chicken and cook for 15 mins or until just cooked. Shred when cool.

* Step 2

Combine lime juice, palm sugar, fish sauce and 1/4 cup coconut milk in a bowl.

* Step 3

Combine chicken, dressing, mango, avocado, capsicum, spring onion chilli in a bowl.
