Conchiglie Pasta is a type of Italian Pasta with a shape of a Seashells or Shells. This one is used in Soups, Salads, with Cheese and with various other Sauces. Made up of Durum Wheat variety this one stands apart in terms of it's shape.
This one here is made by me with the simple Tomato sauce with the addition of Basil, Green Onions and Leek.

Cooking instructions
* Step 1
Bring a large vessel with some water and salt to a rolling boil. Add the pasta and cook al dente.
* Step 2
Drain and keep aside. Do it just as the sauce gets ready. Do not keep it cooked for a long time. It's highly recommended by me to follow this for all pastas and spaghetti preparations. Always start with your sauce making at first. Then halfway through, boil the pasta or spaghetti. It's always better that way.
* Step 3
In a non-stick pot, heat oil and saute onions. Also add chopped leek and green onions. Add garlic shredded or thinly sliced. Saute until translucent and done. Now add finely chopped tomatoes, salt, red chilli and cumin powders. You can blanch them too. Cover and cook until the tomatoes are done. Stir in thyme and basil leaves. Mix well and add pasta now.
* Step 4
Mix well and cook for about 7-8 minutes or just until it's heated up nicely and the basil flavours get blended in with the pasta with a heavenly aroma and it's overall looks too. Tempting and irresistible conchiglie pasta is all ready to be enjoyed. Yum!
