Chickpea and Quinoa Salad with the Vegetables is a treat to our tastebuds. It's absolutely refreshing on any day. Not only is it easy to make, it's absolutely flavourful and delicious too.
Enjoy it for a yummy Brunch on a holiday or even as a lovely snack option for a 4 pm Tea-time. It's great for that choti moti bhook anytime. Though I have used dry Chickpeas, canned variety can also be used for a quick version of this Salad.
Vegetables can be of one's own choice. That's it. As easy as that. Quinoa takes less time in getting done than the Chickpeas. Both of them are amazing when combined. And with all those special Vegetables, it's a winner all the way.

Cooking instructions
* Step 1
Soak both quinoa and the chickpeas for a good 2-3 hours in clean drinking water. Boil them separately and keep aside. Do not discard the water. Use the same for boiling.
* Step 2
Prepare the olive oil dressing. Next is to add everything to a serving bowl. Pour the dressing over it. Toss until combined well.
* Step 3
That's it. Nothing much complicated. Simple yet a filling one. A complete comfort meal in itself. Healthy and wholesome. Serve immediately. Enjoy!
