Ash Gourd or Petha Kaddu ki Kheer by me as a beautiful fusion with a lovely flavour and aroma. Though it's a simple one, addition of cool Ash Gourd makes it an interesting one. The ingredients can be altered according to one's own preference. As it is already tried, I have given the exact measurements but you can always increase or decrease as desired. Serve it warm or cold. It is yum both the ways. I sometimes do add Fresh Cream also to make it more rich. It adds an element of richness to the Kheer. If the Malai is homemade, it's even more better. Khoya or Mawa can also be added but I don't prefer store bought one. If at all I add it, I make it at home. Enjoy this delicious Dessert on any special holiday or occasions as well as Festivals.

Cooking instructions
* Step 1
Wash basmati rice, soak it in enough water for an hour. Blend along with little milk and add it to the pot. Allow to simmer on a low heat.
* Step 2
Allow it to simmer on a low heat until it reduces to 3/4th of it's original volume. Add the grated ash gourd and cook until done for about 10-12 minutes in all. After it's halfway done, add the cardamom powder and sugar as well.
* Step 3
Stir it briskly and adjust the consistency to your liking. Switch off the heat and garnish with almonds. Serve it cold or warm as desired. Enjoy!
