Roasted Moong Dal Khichdi

Dal Khichdi, roasted and then soaked with Rice for a lovely one pot meal. In this particular version, I have used Yellow Lentils or Moong Daal. And not only that, I have made use of the oven roasted Moong Daal in this dish as it was handy. I had it with me. Otherwise roast it in a pan just before soaking. It not only gives a unique flavour but also a great texture.
It goes well with Mutton mince as a side dish along with a whole lot of other accompaniments like Papad or Poppadums, Pickle, Ghee, Curd and Chutney.

Cooking instructions
* Step 1
First of all, soak Rice and the Lentils after washing thoroughly for at least 20 minutes. Now in a non-stick pot, heat Ghee or Oil or a combination of both, and add the Ginger garlic paste, Bay Leaf and the sliced Onion to it along with some chopped Tomatoes.
* Step 2
Add the whole Garam Masalas one by one. Also, add the Garam masala and the Turmeric powders along with Green Chillies and Coriander Leaves. After about 5 to 8 minutes of sauteeing, add the soaked Rice and the Lentils.
* Step 3
Saute for a minute and then add water as required accordingly along with the salt. For the first 10 minutes, let it cook on a high flame stirring in between to mix everything well. After 10 minutes, lower the flame and cover. In between just keep mixing it gently. That's it. It gets done pretty quickly. Yum!
