Hyderabadi Khichdi Kheema

#HNV #cookpadindia Hyderabadi Khichdi is World famous in India. It's a well known one pot meal known for it's incredible taste. Though it's quite simple on it's own, a huge array of different side dishes and accompaniments is what makes this way too incredible. As the popular saying goes- Khichdi ke chaar yaar- Kheema, Khatta, Ghee, Achar. In this particular version here, I have just shared only one side dish.

Cooking instructions

* Step 1

First of all, soak Rice and the Lentils after washing thoroughly for at least 20 minutes. Now in a non-stick pot, heat Ghee or Oil or a combination of both and add the Ginger garlic paste and the sliced Onion to it. Saute it for a few minutes until the raw smell fades away on a low heat.

* Step 2

Add the whole Garam Masalas one by one. Also add the Garam masala and the Turmeric powders along with Green Chillies and Coriander Leaves. After about 5 minutes of sauteeing, add the soaked Rice and the Lentils.

* Step 3

Saute for a minute and then add about 4 cups of water along with the salt. For the first 10 minutes, let it cook on high flame stirring in between, to mix everything well. After 10 minutes, lower the flame and cover. In between just keep mixing it gently. That's it. It gets done pretty quickly. Yum!

* Step 4

For the Kheema, saute Onions and Tomatoes in enough Oil with some Ginger garlic paste and the powdered spices. Saute on a low heat until soft and mushy. Now add the Lamb Mince or Kheema to it. Also add some chopped Coriander Leaves and Garam masala. Roast all of it on a low heat until done. Adjust Salt accordingly. Do not add water to it. It should get cooked in it's own juices. It should not be too dry. Since it has Tomatoes and Onions, it's absolutely a semi dry one. Enjoy!
