Stove top Pitas are soft and a delight to the tastebuds. These can be made even in oven but the top becomes a little crisp due to baking. The temperature should be accurately balanced for a good oven baked Pita. This is not possible in home ovens because the temperature needed is much higher for them to get perfectly baked and are therefore done in brick ovens. Hence stovetop version I feel is the best that suits us homecooks.
Though I have tried to bake as well. And the result was okay but still not like those store bought one's. Anyways it's absolutely okay. But stovetop one's are always perfect. Soft and fluffy with a nice nutty flavour due to Aata.
These are used in many a Middle Eastern dishes including the popular Shawarma.

Cooking instructions
* Step 1
Knead a smooth dough with all the ingredients. The dough will be tacky and sticky at first. But kneading it with a little extra Flour makes it smooth and elastic. Knead it for more about 7-8 minutes in all. This kneading is very important for a good Pita. Cover and keep it in a warm place to double up in volume.
* Step 2
After 3 hours, bring the dough onto the working surface. Punch it down once and divide into 10 to 12 equal sized balls. Roll each into a disc keeping it 1 inch thick. Do not roll into very thick discs. Cook it on a hot griddle until it puffs up. Make sure the griddle or tawa is very hot. Otherwise the Pitas will not puff or cook well.
* Step 3
Flip it over and cook it on the other side too. Stack them up in a casserole to keep them warm. Serve hot as desired.
* Step 4
Tawa Pitas are a bit more soft. Hence these are best used for Wraps and Shawarmas.
