Availability of fresh red chillies

Ingredient

50 gm

ginger

8-10 tbsp

Oil

1 tsp

Vinegar

Cooking instructions

* Step 1

Wash and Deskin ginger and garlic

* Step 2

Wash and Deseed and chop fresh red chillies

Crush all with salt and 1 lemon's juice to a paste

Allow some pieces to remain coarse

* Step 5

In oil add the paste and salt

* Step 6

Cook well. Keep stirring until the oil separates

Add in vinegar and chilli powder

Transfer to a bowl and cool completely

Fill into sterilized airtight jar or container

Note to keep oil covering the top layer of the sauce

If required add some heated and cooled oil on top for preservation
