Bhetki Hummus Shell Puff

Hummus is a delicious spread or dip made from chickpeas, tahini, lemon, and spices. It’s commonly eaten in the Middle East and the Mediterranean. Tahini is a paste made from ground sesame seeds. It makes the hummus taste incredible. Now make a yummy filling with bhetki fillets and stuff in puff pastry sheets designing like shells

Cooking instructions

* Step 1

PROCEDURE FOR TAHINI 1.Toast sesame seeds. Add sesame seeds to a wide, dry saucepan over medium-low heat and toast, stirring constantly until the seeds become fragrant and very lightly colored (not brown), 3 to 5 minutes. Careful here, sesame seeds can burn quickly.

2.Transfer toasted seeds to a large plate and cool completely. When the sesame seeds have cooled, we throw them into the bowl of our food processor, shut the lid then process until a crumbly paste begins to form. To help the tahini turn into an extra smooth paste, we add a few tablespoon of olive oil. (I have directly used the toasted sesame seeds for hummus).

PROCEDURE FOR HUMMUS

3.Process for 30 seconds, scrape the sides and bottom of the bowl then process another 30 seconds or until well blended. Pressure cook the soaked chickpeas,open, drain, and rinse the chickpeas. Add half of the chickpeas to the food processor and process for 1 minute. Scrape sides and bottom of the bowl, then add remaining chickpeas and process until thick and quite smooth; 1 to 2 minutes. Store the water stock to use later.

4.Most likely the hummus will be too thick or still have tiny bits of chickpea. To fix this, with the food processor turned on, slowly add 2 to 3 tablespoon of reserved stock until you reach the perfect consistency. 5.Taste for salt and adjust as needed. Serve hummus with a drizzle of olive oil.

Procedure for bhetki hummus filling 1.Add 2 tbsp olive oil in a pan, add minced garlic, chopped onions, bell peppers and stir fry. 2. Add the bhetki fillets and mix well.Add salt and pepper to taste. 3.Add onion, ginger-garlic powder and mix well. 4. Now add 4 tbsp hummus and mix well to make a thick consistent paste.

Procedure for puff pastry 1.Using a food processor, fitted with the metal blade, add flour and salt to the bowl, then add 3/4 cup (170 grams) cold butter cut in cubes and pulse until butter is absorbed (about 10 to 12 one second pulses), then add the remaining cold butter (cubed) and pulse two or three times (no more) to combine, add the cold water and pulse four or five times just until the dough comes together to form a ball (really important not to over process).

2.On a lightly floured surface place dough and knead lightly approximately 10 times. With a lightly floured rolling- pin (lightly flour the dough so it doesn’t stick) roll into a rectangle 3.Fold the dough like an envelope then fold in half, wrap in plastic and refrigerate for 1 – 2 hours. 4. Cut into small square shapes for use.

PROCEDURE FOR ASSEMBLING

6. Brush the puffs with egg white and place on a baking tray in a preheated oven at 190 degrees centigrade for 40 minutes till brown on both sides and fluffy. 7. The puffs are ready to serve. You can enjoy with some hummus as a dip. Serve with masala tea.
