This is a famous Bengali rice delicacy.Bengali Basanti pulao or Mishti Pulao, is the traditional Bengali recipe, which is prepared predominantly with Gobindobhog rice and saffron threads to give this delight a heavenly taste. Being a festive dish, Basanti Pulao brings along the fervour and mood of celebration and happiness all over, as it embraces all kinds of festivals and carnivals and adds wonderfully to the colours of happiness.

Cooking instructions
* Step 1
To make this yummy recipe, wash and rinse and basmati rice thoroughly. Soak the rice in a pot full of water for about 30 minutes. Then drain off and mix yellow food color and give a nice mix. Spread on a kitchen napkin and allow the water to evaporate
* Step 2
In the meanwhile, heat ghee in a saucepan. After the ghee heats up, add raisins and cashew nuts to the saucepan and stir fry them over a high to medium flame until slightly golden brown in colour. Then add cardamom, cinnamon stick, bay leaf, and cloves to the saucepan and fry for a while. Now add the rice, salt and slightly fry with the spices till the fragrance of gobindobhog rice comes out.
* Step 3
Now transfer the whole mixture to a microwave bowl. Preheat oven to 180 degrees for 10 minutes and just add water:rice as 2:1 and place the bowl for 10 minutes.
* Step 4
Now take out from oven and add sugar and 1 tbsp kewra water, saffron (soak in 1 tbsp warm milk), mix lightly and place back at same condition for another 10 minutes. Fluff up the pulao with spoon and it is ready. Serve with spicy mutton curry (recipe link given)
