🍖Have with your cooked meats such as lamb for a tart but sweet complementary sauce.

Cooking instructions
* Step 1
Bring your water to boil and add your sugar to dissolve. Bring back to a simmer.
* Step 2
Wash your fruit. Add to your water and simmer until the fruit breaks down. These plums were very over ripe and would have been thrown away so will cook down quickly. If you have firmer plums cut and remove the stone before adding to the pot. As mine were very soft I added them whole and will remove the stones at the end.
Tip- if you can't remove stones beforehand just count how many plums you put in the pot and then you know how many stones to remove at the end.
* Step 3
Add your cinnamon and star anise and continue to simmer.
* Step 4
Once the compote has cooked down to a thick fleshy mix you can sieve to remove stones or if you already have de-stoned just decant into a sealable container. Cool completely before refrigerating.
