Rhubarb feta salad

Rhubarb feta salad

Ingredient

Cooking instructions

* Step 1

Wash and cut rhubarb into bite-sized pieces. In a bowl sprinkle over the sugar and mix to coat well. Set aside for 10 minutes

* Step 2

Preheat oven to 200c and line a baking tray with parchment paper. A lot of liquid will bake out of the rhubarb so please use a baking tray that has raised edges.

* Step 3

Place rhubarb onto your lined tray and bake for 10 minutes until soft.

Once baked remove from the oven and set aside whilst you make the dressing by mixing together your vinegar, oil and seasonings.

* Step 5

Add rhubarb to your dressing and mix.

* Step 6

Crumble in a handful of crushed walnuts and raisins. When ready to serve plate up the mixture and crumble feta cheese on top along with fresh mint and parsley.

* Step 7

🌿Eat on it own or mixed with loads of salad leaves. 🥜 Font like walnuts, try it with toasted almonds, or pinenuts 🧀 Don't have feta, try with goats cheese.
