Stuffed Jalapeño with bacon

I love stuffed Jalapeños and as I have a winter sniffles at the moment Im craving spicy and salty foods. These stuffed peepers in bacon were just want I needed to warm myself on a cold autumnal day 🌶🥓🧀 this so easy and quick to make. I always order stuffed Jalapeño or Jalapeño peppers when I'm eating out but this is the first time I've made them at home...and ohh they were glorious.

Cooking instructions

* Step 1

Cut jalapeño peppers in half lengthways and scoop out the seeds and flesh. 🌶 Be careful where you put your hands, try not to touch your face, eyes or mouth at this stage as the peppers seeds are very spicy. You might prefer to wear gloves throughout if you have a pair.

Mix your cream cheese, chopped parsley, spring onion and finally grated cheese altogether.

STUFFING: Using a teaspoon, stuff each pepper shell. 🧀 if you have any stuffing mixture leftover why not use it as a delicious topping on toast or as a little dip.

* Step 4

WRAPPING: Place a stuffed Jalapeño pepper at one end of your bacon rasher strip and roll until the pepper is fully wrapped up. Depending on the size of your peppers you might be able to use half of a slice of bacon for some of these. Use your eye to judge how much bacon you need when rolling your peppers.

* Step 5

Place in a lightly oiled baking tray and place a toothpick to stable them during cooking. Bake in a pre-heated oven for 20 minutes at 200C
