Mix Vegetable Red Poha

Red poha is made by flattening red rice. Poha, has relatively higher nutritional content than rice due to the presence of the aleurone layer. Red Rice Kanda Poha is a traditional Maharashtrian breakfast dish made with flattened red rice flakes, onions, and spices. It is a quick and easy recipe. I have added potatoes and peas too to make it more healthy.

Cooking instructions
* Step 1
Wash red Poha in running water 2-3 times and remove all dirt. Place it in a colander.
* Step 2
Wash peel and chop onion and potato. Grate ginger. Clean peas and coriander leaves.
* Step 3
Heat cooking oil in a wok. Add mustard seeds and when mustard seeds splutter add chopped onion and saute till translucent. Then add grated ginger, chopped green chilli, peas and chopped potato and cook on low flame covered till done.
* Step 4
Add salt, turmeric and Red chilli powder along with magic masala. Mix well.
* Step 5
Now add soaked red Poha, peanuts, raisins and chopped tomatoes and mix it well.
* Step 6
Add sugar and lemon juice and mix. Switch off the flame.
* Step 7
Serve hot garnished with chopped coriander leaves.
