Shahi Pulao is an easy and flavoured royal recipe made with basmati rice, vegetables and a lot of dry fruits and raisins. it is an ideal simple one-pot meal.

Cooking instructions
* Step 1
Wash and soak rice for 15 minutes. Heat 1 tsp cooking oil in a pressure cooker. Add all khade masale -8 Black pepper seeds, 4 cloves, 2 cardamom, 1 cinnamon stick mentioned in ingredients and saute for 30 seconds. Add rice, salt turmeric powder and water and close the lid and pressure cook for 1 whistle and switch off the flame.
* Step 2
Cut paneer in small squares. In a wok add 2 tb spoon cooking oil and shallow fry paneer pieces from both sides and immediately transfer it in hot water. In this way paneer will remain soft.
* Step 3
Now chop onion length wise and fry in remaining cooking oil. Fry cashew nuts and raisins also.
* Step 4
Add remaining 1tb spoon cooking oil in the wok. Add cumin seeds and when cumin seeds splutter add tomato puree and saute for 30 seconds. Add Red chilli powder and pulao masala. Now add peas and stir. Cover it with lid and cook for 5 minutes or till peas get soft
* Step 5
Now open the pressure cooker. In a separate pan place 1 row of rice, then one layer of cooked peas, then paneer layer, then again remaining rice, a layer of cashew and raisins, then a layer of fried onion.
* Step 6
Now place the lid and cook for another 5 minutes on low flame. Switch off the flame. Open the lid after 5 minutes.
