Dahi Ki Arbi (colacasia in curd)

#Indianrecipes Dahi Ki arbi-During summers we wish to eat something light and cool so I often make curries in which curd is added. Arbi or colocasia is such a vegetable that can be cooked in a delicious curd gravy. It is very rich in fiber so excellent for the digestive system.

Ingredient

250 gms

Arbi

1/2 bowl

curd

as per taste

Salt

4-6 pods

garlic

2 tbsp

cooking oil

1/8 tsp

asafoetida

1/4 tsp

carrom seeds

1 bowl

water

1/2 tsp

garam masala

Cooking instructions

* Step 1

Wash and pressure cook arbi till 1 whistle. Switch off the flame and let pressure release automatically. Open the lid and remove the skin of the boiled arbi. Cut it in halves.

Add curd, salt, red chili powder, turmeric powder, and coriander seeds and mix it well. Keep this bowl in the refrigerator.

Wash, peel, and chop onion, garlic, green chili, and ginger. Grate tomatoes and make a puree.

Heat oil in a wok. Add asafoetida and saute for 1 minute. Add carrom seeds and saute for 1 minute. Now add onion, ginger, garlic, and green chili and saute till golden brown. Now add tomato puree and cook till oil leaves the sides of the wok.

Add marinated arbi and toss well till it gets coated with masala nicely.

Add water and let it come to a boil.

Lower the flame and cook on low flame till gravy turns thick. Add kasuri methi and garam masala and mix. Switch off the flame.

Serve hot with chapatti.
