Dahi Ki Arbi (colacasia in curd)

Dahi Ki arbi-During summers we wish to eat something light and cool so I often make curries in which curd is added. Arbi or colocasia is such a vegetable that can be cooked in a delicious curd gravy. It is very rich in fiber so excellent for the digestive system.

Cooking instructions
* Step 1
Wash and pressure cook arbi till 1 whistle. Switch off the flame and let pressure release automatically. Open the lid and remove the skin of the boiled arbi. Cut it in halves.
* Step 2
Add curd, salt, red chili powder, turmeric powder, and coriander seeds and mix it well. Keep this bowl in the refrigerator.
* Step 3
Wash, peel, and chop onion, garlic, green chili, and ginger. Grate tomatoes and make a puree.
* Step 4
Heat oil in a wok. Add asafoetida and saute for 1 minute. Add carrom seeds and saute for 1 minute. Now add onion, ginger, garlic, and green chili and saute till golden brown. Now add tomato puree and cook till oil leaves the sides of the wok.
* Step 5
Add marinated arbi and toss well till it gets coated with masala nicely.
* Step 6
Add water and let it come to a boil.
* Step 7
Lower the flame and cook on low flame till gravy turns thick. Add kasuri methi and garam masala and mix. Switch off the flame.
