Whole Chicken + Gravy : Instant Pot 6/17/2023 - Done!
🍗 I live with 2 men who can eat a girl out of her own home. So I gotta use classics sometimes to keep them full! Protein! We have this over rice 🍚 or mashed potatoes 🥔! It's a low ingredient classic and I'll be using the Leftovers to make chicken pot pie and the scraps for bone broth <3

Cooking instructions
* Step 1
Some Notes:
1) You'll want to use a Trivet. I bought an aftermarket one but all instapots seem to come with them. It will help you get the chicken out later so you can make gravy. You can also ball up foil to lift it up but at that point... just skip gravy 😋
* Step 2
Prepare Your Chicken: Clean your chicken in cold water inside and out.
* Step 3
Prepare Your Butter: Melt all the butter in the microwave for about 20 seconds at a time until it's melted.
* Step 4
Season the Butter: Add 3TBSP garlic and any seasonings you like to the butter. What I used is above but feel free to make your own or use a seasoning packet!
* Step 5
Touch the Chicken: Pat your chicken dry with paper towles or a clean kitchen towel (wash after!). Separate the layer of skin with a butter knife. This is so you can *stuff* under the skin with the seasoning mixture. If you wanna be lazy - skip this part lol. But I recommend doing it.
* Step 6
Season your Chicken: Put your seasoning+butter mixture under the skin, inside the chicken and on top. Go crazy and smother it! If you don't have enough seasoning for your liking, make more! It's your chicken!
* Step 7
Do last minute touches (wink wink): put 1 cup of water into the instant pot and add the chicken in there on top of the Trivet. If u don't have a Trivet - oh well! Just can't pull the chicken out whole is all. No biggie!
* Step 8
Cooking it! About time: So the standard time for chicken is 6 minutes per pound. I used a 5.84lb chicken so I did mine for 36 minutes. A few minutes over won't hurt anything. Just makes the chicken more prone to falling apart.
* Step 9
Toasty!: After the 15 minutes set time, release the pressure. Pull the chicken out and put it on a pan to throw in the oven. Set it to BROIL and cook it for around 5 minutes or until it's the level of golden/brown/char you like. Yes some people like char. This step is pretty optional and all about preference. Regardless - get the chicken out of the instant pot if you wanna make gravy. If u don't, just eat it as is :)
* Step 10
Slurry: while your chicken is roasting (or just sitting on the side) set your instant pot to the SAUTE function and press on. Get a cup and add 4tbsp of cornstarch and about half a cup of COLD water. Use a fork and stir it up really good. (This is called a slurry). Add it to the instant pot. You are gonna keep stirring this until it's a consistency you are happy with for your gravy. I love a thick gravy. When you are good - un plug your instant pot!
* Step 11
Prepare the Plates! As I said earlier - we have this over rice or mashed potatoes. We didn't add salt (well I did but not officially in the recipe) so make sure you salt your side a little bit!
Smother it in gravy - maybe have some biscuits. It's a mood
