Roasted Sweet Potato and Ginger Soup

Cooking instructions

* Step 1

Preheat oven to 230°C. Poke Sweet Potatoes with a fork and wrap in foil. Bake for 1 to 1 and a half hours. Remove from oven and allow to cool. Remove the skin from the Sweet Potato.

Heat Olive Oil in Dutch Oven over medium-high heat.

* Step 3

Add Onion and Ginger to the Dutch Oven. Cook until Onion is translucent.

* Step 4

Add Jalapeños, Coriander and Nutmeg. Stir to combine cook for 3 minutes. Add Sweet Potato and Stock.

* Step 5

Simmer for 10 minutes then puree with immersion blender. Season with Salt. Garnish with Spring Onions.
