Tropical Quinoa Chicken Salad
Cooking instructions
* Step 1
Prepare the Quinoa. Set aside to cool.
* Step 2
Season the Chicken cubes with Salt, Pepper and Paprika.
* Step 3
Heat Oil in a large skillet and fry the Chicken in batches. Set aside and allow to cool.
* Step 4
Combine the Quinoa, Chicken, Cucumber, Bell Pepper, Tomatoes and the white parts of the Spring Onion in a large salad bowl.
* Step 5
Add the Pineapple and Mango. Combine and season with Salt, Pepper and Lime juice.
* Step 6
Serve with a sprinkle of the greens of the Spring Onions and Cashew Nuts.
