Minestra di verdure
This pasta and vegetable soup, known more commonly as minestrone, is healthy, hearty and delicious. I made it with left over veg from the festive period and it's just what I needed after all the food gobbled up! #italian #soup #vegetables #fridgeraid #vegetarian #vegan #detox

Cooking instructions
* Step 1
Heat a bit of oil in a pot. Add the veg and sauté for about 3-4 minutes. Add water and bring to the boil. Simmer on low for about 20 mins until veg is tender
* Step 2
Remove about half of the veg and water and blend separately in a jug until smooth. Add back in and bring to the boil again. Now add the pasta and stir constantly for about 2 mins. Continue cooking until pasta is cooked and the stock is slightly dense. Season to taste
* Step 3
Serve with a drizzle of olive oil
