Blueberry omelette
I tried this on holiday in the Alto Adige mountains and just had to make it at home! It's not a combination that immediately comes to mind but it really works. Great, breakfast, brunch or afternoon tea #blueberry #omelette #brunch #breakfast #afternoontea

Cooking instructions
* Step 1
Grease a pan with oil. Put on low heat. Beat eggs together. When pan is hot, add the beaten eggs and cook on medium low until semi solid on top. Flip omelette over and cook for another couple of minutes. Spread the blueberry compote all over. Fold over and serve with a sprinkle of sugar
