Dairy free leek and potato mash - and it's creamy!
Cooking instructions
* Step 1
Peel, chop potatoes into small cubes and put in a pot. Chop leek finely and add to potatoes. Cover with water and bring to the boil. Season to taste and add a stock cube. Stir and simmer on low for about 40 mins until potatoes cooked and it's all mushy
* Step 2
Drain a little water if necessary. Mash up until 'creamy' and serve
