Sausage, bean and potato stew
Some time ago, we went on holiday to Slovenia and had an amazing stew. Stupid me, didn't write down the ingredients, flavours etc like I sometimes do in a restaurant! I hunted on the internet too but couldn't find anything that matched what I remembered. So here's what we ate, roughly 😂 easy one pot dinner #stew #dinner #mainmeal

Cooking instructions
* Step 1
Chop sausages into bite size pieces. Peel and chop potatoes. Brown sausages in a pan, no oil needed, remove and set a side. In the same pan, add the soffritto mix, stirring to get any brown bits from the sausages too, extra flavour
* Step 2
Now add stock, bay leaves and passata. Stir and add potatoes. Bring back to the boil and simmer for about 20-25 mins. Add sausages now and continue simmering for another 10 mins.
* Step 3
Drain and rinse the beans and throw them in now. Season to taste and simmer for another 5 mins. Serve with fresh bread
