Brazilian Fish Soup
Followed this recipe: placed over rice :)
Cooking instructions
* Step 1
Marinate fish with lime juice and salt and pepper (to your taste). About 10-15 minutes.
* Step 2
Cut up tomatoes, I used 7 baby romas.
* Step 3
Heat up oil and garlic and saute for about 2 min. (I did not add hot pepper) Then add tomatoes, frozen pepper & onion mix. Subbed fresh peppers for frozen green, yellow, orange pepper with white onion mix. Saute for about 5 minutes.
* Step 4
Add coconut milk, herbs, coriander and fish. Mix all together, let simmer about 15 minutes or until fish is cooked. Add salt/pepper to taste.
* Step 5
Placed mine next day over rice. Wow!! It's even better the next day... will thicken up. Froze for later use as well :)
