Store cupboard curry
After a month of not going out much, I needed a curry to lift my spirits. So I defrosted some chicken thighs and raided the spices. I used some cream in a carton that I had in the cupboard as I didn't have natural yoghurt and I must say it is one of the best curries I've even made! #stayingathome #curry #chicken #dinner #mainmeal
Cooking instructions
* Step 1
Sweat onions down in some oil. Add garam masala and then the other spices. Mix well and cook for about 3-4 mins. Then add the chicken
* Step 2
When chicken turns white, add chopped tomatoes. Stir and simmer on low for about 45 mins. Meanwhile cook the rice in salted water, drain well and keep warm while curry finishes
* Step 3
After about 45 mins, add cream. Stir and cook for another 2-3 mins. Serve 😀
