Thai Galangal Panang Chicken Curry

Thai Panang Chicken curry with Galangal is a very famous recipe that is rich in spice and flavour

Cooking instructions
* Step 1
Wash the chicken pieces well. I chose chicken on bones. You can choose breasts or thighs too
* Step 2
In a bowl soak dry red chillies for 10 mins, add the chillies chopped to blender. Don’t discard the water as it will be needed for paste
* Step 3
Add coriander stems, galangal chopped, coriander powder, cumin powder, garlic cloves, shallots sliced, kafir lime chopped fine, kafir lime skin chopped fine, shrimp paste and make a coarse paste.
* Step 4
Add 1 Tbsp water gradually to make a smooth paste
* Step 5
In a wok heat oil and add the paste and stir. Cook for 2-3 mins, add chicken and mix well
* Step 6
Add coconut water and mix well. Cover to cook for 30 mins
* Step 7
Add 1 Tbsp jaggery and mix well.
* Step 8
Plate and enjoy with kafir lime leaves chopped and garnished
