Phulkopi, Beetroot o Sheem Chorchori

#Nov #W4 Chorchori means mix of vegetables and based on season the vegetables change alongwith flavour and cooking style. Due to winters I chose Cauliflower, Flat beans and Beetroot. All healthy and the style of cooking is extremely simple

Ingredient

Cooking time :

Preparation time-10 mins, Cooking time-20 mins

Panch Phoron

1.5 cups

water

1/4 cup

mustard oil

Cooking instructions

* Step 1

Wash all vegetables. Make cauliflower florets big in size. Peel the potatoes and cube, peel the Beetroot and cube, cut the Flat beans in halves.

Steam the beetroots

* Step 3

In a wok heat mustard oil and add Panch Phoron, Green chillies and all vegetables. Fry until golden in colour

* Step 4

In a bowl add mustard paste and 1 Tbsp water and mix, add to the vegetables, add salt and mix well. Add water and cover to cook

The consistency would be dry

Garnish with coriander leaves
