Vegan Baked Misti Doi

Ingredient

Preparation time-10 mins, Cooking time-12hrs
1 ltr

Soya milk

1 cup

sugar

100 ml

water

Cooking instructions

* Step 1

In a pan add 100 ml water and bring it to boil, add soya milk and on medium flame keep stirring until reduced.

Shift this milk to one flame and on another place another pan and add sugar and stir to dissolve, let it caramelise but keep stirring

Keep stirring the milk and sugar

* Step 4

When sugar caramelises add 2 ladles of the reduced milk to sugar and stir immediately, add rest of the milk and set aside from the flame

In a bowl add the cashew curd and whisk until creamy

Add 2 ladles of the milk into the curd and fold well.

Add all the milk into the curd and fold well. Put into ramekins or earthen pots or Matkas

* Step 8

Place the ramekins or Matkas into aluminium tray with 1 cup hot water and bake on Pre heat 180 deg C for 12-15 mins, set aside and refrigerate overnight

* Step 9

Serve chilled a healthy baked Misti Doi
