Pork and Peanut Noodles
This is another in a series of dinners that are relatively quick and easy to make. Besides being tasty, it’s an all-in-one meal that contains meat, veggies, and carbs. I dialed down the spice when I made it for my family, since my four-year-old can’t really eat spicy food. She was a big fan of this dish because of the peanut flavor and because of all the noodles! 🥜 🍜

Cooking instructions
* Step 1
Combine the sauce ingredients (EXCEPT the water) in a bowl, and whisk well.
* Step 2
In a frying pan, sauté the ground meat until no pink remains. Work in batches so the pan is not crowded and the meat can brown.
* Step 3
Drain the excess grease/oil from the meat and set the meat aside. Wipe the pan out and sauté the onion and carrots until softened.
* Step 4
Add the garlic and ginger (and red pepper, if desired) and sauté 2 to 3 minutes longer.
* Step 5
Transfer the cooked veggies to a large pot, then stir in the cooked meat.
* Step 6
Add the prepared sauce plus the water. Stir well until everything is coated. Heat until bubbly, then reduce heat and simmer for about 3 minutes or until the sauce thickens slightly.
* Step 7
Taste, and season with salt and/or pepper to your taste.
* Step 8
Cook the pasta or noodles according to the package directions.
Transfer pasta to individual serving bowls and ladle pork mixture over the noodles. Garnish as desired.
