Chilli Chicken with Chicken Hakka Noodles

Chilli Chicken with Chicken Hakka Noodles

#thc #thcweek5 Chinese food is so universal in India and very Indianised. I made for lunch Chilli Chicken and Chicken Hakka Noodles. My meal was complete

Cooking instructions

* Step 1

For Chilli Chicken - wash the boneless breasts and slice them into thin strips. In a bowl add 1 Tbsp for flour with water and add to the chicken breasts strips, salt and black pepper powder, egg white and coat the strips well.

* Step 2

In a wok heat oil and add the chicken breast strips. On medium flame fry them golden but not too much. Set aside

* Step 3

Add 3-4 green chilies with little water to a blender to make a paste. Set aside

* Step 4

In the same wok heat oil, add sliced onions, add chopped ginger and minced garlic, spring onion bulbs sliced, stir for 1-2 mins and add 1/2 of chicken stock.

* Step 5

On low flame add cubed green capsicum, cubed onions and coriander stems. Add slit green chillies. Stir for 2 mins.

* Step 6

Add fried chicken strips, salt, and dark soya sauce, light soya sauce, vinegar and rest of the chicken stock. Stir on low flame

* Step 7

Add spring onion greens and cornflour slurry. As soon the gravy becomes thick, set aside.

* Step 8

Garnish with spring onion greens and coriander leaves chopped. Chilli chicken is ready to serve

* Step 9

For Chicken Hakka Noodles - in a bowl boil water, add salt and little oil. Add noodles and on high flame boil

* Step 10

Drain and rinse in running cold water. Add to a bowl and drizzle oil to avoid stickiness of the noodles

* Step 11

Take chicken breast and cut into strips. Take vegetables and julienne them.

* Step 12

In a bowl add chicken strips, one egg, salt, black pepper powder and coat the strips well.

* Step 13

In a wok heat oil and fry the chicken strips lightly. Set aside

* Step 14

In the same wok heat oil and break eggs to make a scrambled eggs. Quickly set aside

* Step 15

In the same wok heat rest of the oil and add chopped onions, garlic and spring onion bulbs sliced, stir for 2-3 mins.

* Step 16

Add julienned vegetables of cabbage, carrots, capsicum and stir for 2 mins

* Step 17

Add scrambled eggs and fried chicken. Add noodles, add vinegar, chilli oil and soya sauce. Stir all very well

* Step 18

Add salt and black pepper powder. Stir well, add spring onion greens and set aside

* Step 19

Plate and enjoy
