Happy Bhoot Chaturdashi/ Happy Choti Diwali Chefs! In Kolkata, Bengali celebrate Bhoot Chaturdashi with having 14 kinds of leafy vegetables. But keeping that aside, Diwali is not complete without savories with sweets. So my presentation is Mini Kachori. We all love Kachori’s in various forms and this one is a major hit.

Cooking instructions
* Step 1
For Dough - In a bowl add maida, oil, salt and mix well, add little water to make a soft dough, rest for 15 min covered.
* Step 2
For stuffing - in a pan roast whole black pepper, whole coriander seeds, whole fennel seeds, whole cumin seeds for 2 mins, add to a blender, and coarsely blend.
* Step 4
Add to a blender Bhujia and coarsely blend. Add this to the roasted masala.
* Step 5
Add salt, black salt, red chili powder, amchur powder, Chaat masala, and Hing, mix
* Step 6
Add chopped raisins, chopped cashew nuts, chopped almonds to the mix and mix well.
* Step 7
Add tamarind chutney to the mix and mix well to make small doughs that would be going in as a stuffing.
* Step 8
Knead the dough again for 2 mins, make small balls and make a bowl shape, add the filling ball and fold from all corners to a small ball, there should be no cracks.
* Step 10
In a heavy-bottomed wok heat oil, reduce to low flame and gently add the balls, allow the balls to fry without touching for 4-5 mins, gently shake the wok and gently turn the balls.
* Step 11
Deep fry golden and set aside.
* Step 12
Plate and enjoy. You can’t stop at one.
