Rakhi is on Sunday and Rabri Samose is one of my cousin brother’s favourite. So let’s dig in

Cooking instructions
* Step 1
For Rabri - In a pan boil milk and once it comes to boil, reduce the flame and keep stirring to bring the milk level to half. Add condensed milk and keep stirring to make a Rabri. Once the consistency is achieved, set aside and add cardamom powder, add chopped mixed nuts of almonds and pistachios and set aside
* Step 2
For Syrup - we don’t need any string consistency. Therefore in a pan heat water, add sugar, Rose water and lime juice to make the syrup. When it’s sticky enough, set aside
* Step 3
For Samose - in a bowl add Maida, ghee, salt and adequate water to make a dough, set aside covered with a muslin cloth for 10 mins.
* Step 4
With a rolling pin roll out the dough and make a small Roti like shape, cut into half. Take one half and make a fold, add the Rabri filling and close the sides with a Maida slurry (water and Maida mixed), set aside once batches completed
* Step 5
In a wok heat ghee and fry the Samose carefully, once golden in colour set aside. The flame should be medium.
* Step 6
Dip the Samose into the syrup for 10-15 seconds and set aside
* Step 7
Plate with a bowl of Rabri and enjoy the Rabri Samose
